Reflections on 2011

2011 has gone by too quickly.

I can hardly believe that I’ve survived my first year in business 🙂

I have learnt new techniques, etched recipes into my mind, dealt with customers that were not friends nor friends of friends (which is a great achievement to all cake decorators, I believe!),  made mistakes, made new friends and good friends out of colleagues, (unfortunately) not do too well in school, learnt from mistakes, covered my first fondant cake.. the list goes on, I can hardly condense twelve months of lessons into a sentence but yes, in short, I have learnt so much and I will continue learning… and hopefully teaching. 🙂

I have so many people to thank as well, for the support given to this small business – all my customers, my closest friends & my parents 🙂 I don’t know what 2012 will hold.. but it will definitely be a busy year. 🙂

Happy Thanksgiving!

Happy Thanksgiving everyone!

Although we don’t celebrate this holiday in Singapore, I’m always looking for a good excuse to bake! 😉

Pecan Pie Cupcakes/Muffins Recipe

Makes 9 standard cupcakes or 16 – 20 mini cupcakes

Ingredients:

1 cup (250g) Chopped Pecans

1/2 cup All Purpose Flour

1 cup packed Brown Sugar (light brown)

2/3 Unsalted Butter, melted

2 Eggs, lightly beaten

Method:

1. Preheat oven to 350 degrees fahrenheit (175 degrees celsius)

2. Combine all dry ingredients

3. Combine all wet ingredients

4. Pour wet ingredients into dry ingredients and mix well.

5. Pour into cupcake liners, 3/4 full and bake for 18 – 20 minutes.

I love how they turned out – super light, moist with a crunch in each bite!

Definitely a recipe for keepers… have fun baking! 🙂
